Shaoxing Rice Wine: a cultural symbol
Shaoxing rice wine is known as the "outstanding representative" of Chinese rice wine. It is not only a kind of wine, but also a cultural symbol that has been flowing for thousands of years. Together with beer and wine, it is known as the "three major ancient wines in the world".
📜 Historical origin: from the Spring and Autumn Period
The history of Shaoxing winemaking can be traced back to the Spring and Autumn Period and the Warring States Period. According to historical records, Gou Jian, the king of Yue, "threw mash to work for his teachers", and by the Northern and Southern Dynasties, it had become a tribute. "Tiao Ding Ji" of the Qing Dynasty even praised it as "top quality with sweet taste, clear colour, fragrant aroma and mellow power". In 2006, its brewing techniques were included in the first batch of national intangible cultural heritage.
🏞️ The right time and place: good water makes good wine
· "Blood in wine" - Jianhu water: collected from Kuaiji mountain springs, the water is clear, moderate in hardness and rich in trace elements. Without Jianhu water, authentic Shaoxing rice wine cannot be brewed.
· "Meat in wine" - refined white glutinous rice and "bone in wine" - yellow-skinned wheat: the three together form the basis of its unique flavour.
🕰️ Ancient brewing: the art of time precipitation
Shaoxing rice wine follows the ancient method of "winter brewing" and the process is extremely particular:
1. July wine medicine: made from Polygonum spp., early rice, etc.
2. September wheat koji: made from natural fermentation of wheat.
3. Begin brewing at the beginning of winter: the temperature is low, there are few bacteria, and the water quality is stable. Fermentation begins.
4. Low-temperature fermentation for up to 90 days: "Rake" during this period is key and determines the final style.
5. Press the wine at the beginning of spring the next year: separate the wine liquid and lees.
6. Decoction and aging: After sterilization, it is aged in pottery jars for at least three years before being put on the market.
🏺Four major varieties: sweet and dry taste spectrum
According to the sugar content from low to high, it is mainly divided into four types:
· Yuanhong wine (dry type): sugar content <15.0 g/L, orange-yellow wine, refreshing and slightly bitter taste.
· Add rice wine (semi-dry type): the most typical representative, named after increasing the amount of glutinous rice, it is mellow and sweet.
· Good wine making (semi-sweet type): Made with aged Yuan red wine instead of water, the wine is richer in body.
· Xiangxue wine (sweet type): brewed with white wine instead of water, it has a dark color, sweet taste and rich aroma.
🏛️ Well-known brands and tastings
·Three benchmarks: Guyue Longshan (state banquet quality), Kuaijishan (started in 1743), and Tapai (adhering to handmade winter brewing).
· Cultural symbols: Ner Hong (marriage customs), Kong Yiji and Xianheng (Lu Xun cultural IP).

· Drinking: Traditional warm drinks (40-45℃) can better stimulate the aroma; it is also often paired with plums and shredded ginger, or used in cooking (such as drunken crabs and rice wine braised meat).
· Health preservation: It is warm in nature, has the benefits of warming and dispersing cold (warm drinks relieve cold hands and feet), strengthening the spleen and appetising, rich in amino acids (18 types, including 8 essential amino acids) and antioxidant.
